Every morning when I wake up, I have one thing on my mind. Coffee! I always make mine extra strong and top it off with some raw organic cream that I skim right off the top of one of the jars we get each week from a dairy farm a few towns over.
There really is nothing quite like it.
Whenever I am out and about during coffee time and I have to stop somewhere to get my morning fix, I realize just how spoiled I am to that fresh locally sourced cream and extra dark brew I achieve with my french press.
Anything else just. doesn't. cut. it.
After lunch today I was ready for round two. I don't usually do it but I always want to!
At least this recipe contains quality ingredients to satisfy that sweet tooth.
So here is what you are going to need:
2 cans of organic coconut milk (The Native Forest brand has a BPA free liner. )
1 cup of coconut oil
1 teaspoon vanilla
1/2 cup organic maple syrup
1/2 cup very strong brewed coffee
Place all ingredients in the blender and put it on high speed for about 30 seconds.
Pour into your ice cream maker and let it process for 25 minutes or until frozen.
Enjoy your healthy treat!
