Spiced Rooibos Latte

Although coffee is always better than anything else, this Rooibos Latte functions beautifully when you want a warm and cozy drink but you shouldn't be drinking caffeine.   My kids ask for it all the time.  It is so frothy and comforting.

It is a few step process but the end result is a worthwhile treat.

For this recipe you will need:

1.5 cups of strong rooibos tea.  (about 6 tsp. of loose leaf tea for 12 ounces of boiling water)

1.5 cups cream (milk, half and half, almond milk, or coconut milk will also do)

1 teaspoon cinnamon

1 teaspoon vanilla

1 tablespoon honey

Optional: 2 tablespoons pumpkin puree

Warm milk on medium heat until hot, but do not allow it to reach a boil. Remove from heat.

Add in the rest of the ingredients, except the tea, and whisk to combine.

Next add milk mixture and tea to a blender and blend until nice and frothy.
