Do you ever forget you have to make dinner, or is that just me?
If not, pretend I never said that.
If you’re anything like me, you feel so accomplished for having made a delicious midday meal, and getting the kitchen back in working order afterwards, it comes as a complete surprise that your family is hungry yet again a mere five hours later.
I’m more of a fly by the seat of my pants kind of mom than a planner carrying, grocery list wielding, meal planning mom.
That’s where the need for easy meals, with basic ingredients that are always on hand come in.
Enter skillet dinners, a magical invention whereby a bunch of vegetables, meat and spices topped with melted cheese pass for a suitable dinner. The possibilities are literally endless!
Grass Fed Beef, Spinach and Quinoa Skillet Recipe
1 lb grass fed beef
2 tbs butter
1 onion, chopped
1 cup frozen spinach
1 cup cooked quinoa
1, 8 ounce block of cheese
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp salt
sprinkle pepper
optional: guacamole, which I make by mashing two avocados with salt, pepper, garlic powder, lime juice and onion powder
Grass Fed Beef, Spinach and Quinoa Skillet Instructions
- Cook quinoa according to package directions.
- Brown beef in a skillet on medium heat.
- In a separate skillet cook onions in butter until translucent.
- Combine the onions, spinach, browned meat and spices in one skillet.
5. Add in the quinoa.
6. Top with shredded cheese and cook until melted.
7. Top with guacamole, if desired.
