Why You’ll Love This Recipe
Family favorite – This classic comfort food is always a hit. Hamburger patties paired with savory gravy ingredients means everyone is satisfied!
Nutritious – While there is no actual steak in this recipe, it’s still full of nutrients! Salisbury steak gets its name from Dr. James Henry Salisbury, an American physician who promoted a meat-centered diet for digestive health. I’m not saying this is a health food or to follow the Dr. Salisbury method, but I do know that this dish is full of protein and good for you spices.
Easy meal prep – This is a wonderful recipe for meal prep. Mix and form the oval patties earlier in the day or week, then refrigerate until you’re ready to cook (up to 48 hours). Whisk together the sauce ingredients and store the mixture in a jar or airtight container in the fridge. When it’s time to cook, everything comes together quickly.
Ingredients

Onion – If needed, you can substitute about 2-3 teaspoons of onion powder.
Garlic – If you don’t have a garlic clove, you can substitute about 1/8 teaspoon of garlic powder per clove (so 1/4 teaspoon for this recipe). Add more to taste.
Ground beef – Lean beef works best, but you could technically use any ground meat you choose. If you don’t use all ground beef, a blend of ground beef and turkey or chicken would work.
Bread crumbs – I like to make sourdough bread crumbs, but plain bread crumbs or panko breadcrumbs will work too.

How to Make Salisbury Steak

Step 1: Dice one onion, mince the garlic, slice the mushrooms, and cut the remaining two onions into rings.

Step 2: In a large skillet, heat a bit of butter over medium-high heat and sauté the diced onion and garlic until softened.

Step 3: In a large bowl, combine the ground beef, eggs, breadcrumbs, Dijon mustard, ketchup, oregano, thyme, salt, and pepper. Add the cooked onion and garlic mixture, then mix gently until just combined.

Step 4: In the same pan, add the sliced onions and cook over medium heat, stirring occasionally, until golden brown and caramelized. Remove from the pan and set aside.

Step 5: Form the beef mixture into six patties. In a 12-inch cast iron skillet, sear the patties on both sides for 3-5 minutes until browned (they don’t need to be cooked through). Remove and set aside.

Step 6: Add the mushrooms to the same skillet and cook until browned, stirring occasionally.

Step 7: In a bowl or large measuring cup, whisk together the beef broth, tomato paste, Dijon mustard, honey, Worcestershire sauce, balsamic vinegar, oregano, and thyme.

Step 8: Pour the sauce mixture into the skillet with the mushrooms. Bring to a simmer, then ladle out about ½ cup of the hot liquid into a small bowl. Whisk the flour into this liquid until smooth, then return it to the skillet. Stir until the gravy thickens and the raw flour taste is gone. Stir in the heavy cream. Season with salt and pepper to taste.

Step 9: Return the patties and caramelized onions to the skillet. Simmer gently for 15 – 20 minutes, or until the patties are cooked through.

Step 10: Serve and enjoy!
Tips
- Make-Ahead Tip: You can get a head start on dinner by mixing and forming the beef patties earlier in the day — just cover and refrigerate them until you’re ready to cook. You can also whisk together the sauce ingredients (broth, tomato paste, Dijon mustard, honey or maple syrup, Worcestershire sauce, balsamic vinegar, oregano, and thyme) and store the mixture in a jar or airtight container in the fridge. When it’s time to cook, everything comes together fast!
- You’ll know the beef patties are cooked when they reach an internal temperature of 160 degrees Fahrenheit (71 degree Celsius) in the center. If you don’t have a thermometer, cut into one to check — there shouldn’t be any pink remaining and the juices should run clear.
- Store leftover Salisbury steak and onion gravy in an airtight container in the refrigerator for 3 – 4 days. Reheat gently over the stove in a covered skillet to prevent drying out.
Recipe FAQs
A basic recipe is ground beef, onions, breadcrumbs, and seasonings. The main difference with this specific recipe is the homemade mushroom gravy and the use of ketchup instead of bbq sauce or soy sauce for making the patties.
Some of my favorite side dish ideas are sweet potato casserole, whole wheat dinner rolls, green bean casserole, and beet salad with goat cheese.
A hamburger steak is basically a hamburger with no bun. A Salisbury steak has eggs, breadcrumbs, and more in the meat patties.
Onion, garlic, Dijon mustard, and ketchup help add flavor to the meat, while the seasoning sauce is the secret ingredient for amazing flavor! The combination makes the best comfort food!
