Today I want to show how to make a fun, kid-friendly pizza recipe: mini sourdough pizzas on sourdough English muffins. Mini pizzas are so fun to make because they are easily customized. Join my kids and me in the kitchen as we make simple sourdough English muffin pizzas.
Just Needing Pizza
A couple of weeks ago, we discovered this recipe. I had soaked some English muffins and we were planning to just use them in the normal way, but whenever I was going to make them we all decided we wanted pizza. Now, I do have a recipe on here for a really Easy Sourdough Pizza Crust, but this is fun because English muffins have a fluffier crust instead of a crispy crust. Plus, we can make them individually, so if the kids want different toppings, you can do that easily. Mini pizzas are so fun for kids to make!
Sourdough English Muffins
So to begin, the night before you want sourdough English muffins pizzas, stir in a glass bowl:
2 cups flour
1 cup water
1/2 cup fed sourdough starter
Cover it with a towel and let it sit at room temperature for 12- 24 hours. You can get away with a longer time in the cooler months, and the fermentation process can take less time in the summer if your house is hot.
After it has fermented, add to the mixture:
Honey 1 tablespoon
Salt 1 teaspoon
Baking soda 1 teaspoon
Preheat your cast iron skillet on low and add a little coconut oil.
Mix the ingredients together until they are fully incorporated. You will probably have to use your hands for this. The dough will be pretty thick.
Divide the dough into 12 equal parts and drop them in your cast iron skillet.
Keep the heat low for about 10 minutes so the dough has a chance to rise.
Let them cook until doubled in size. Turn the skillet up to medium-low heat, and continue to cook until they are browned slightly on the bottom.
Don’t try to flip them until they come up easily from the pan. The goal is to only flip them once.
Cook them on the other side until browned.
These English muffins have a tendency to cook on the outside before the inside is fully done. So, be sure to not turn the skillet up too high. If they are browned on the outside, but still not done on the inside, throw them in a 250 to 300-degree oven for 10 minutes or so.
After they are cooked all the way through, let them cool for ten minutes.

Once your mini pizzas are loaded with your favorite ingredients, it is time to pop them into the oven at 400 degrees, until they are bubbly and nicely browned. We baked ours for about 15 minutes.

- Cook them on the other side until browned. These English muffins have a tendency to cook on the outside before the inside is full done. So, be sure to not turn the skillet up to high.
- If they are browned on the outside, but still not done on the inside, throw them in a 250 to 300 degree oven for 10 minutes or so.
- After they are cooked all the way through, let them cool for ten minutes.
For English Muffin Pizzas:
- Once the English muffins are cooled, slice open and spread a thin layer of marina sauce on top
- Spread some shredded mozzarella cheese and layer with you favorite toppings.
- Bake for 15 minutes at 400.
