Healthy sweet potato casserole with pecans is a delicious and creamy sweet potato base with a touch of natural sweetness, topped with a crunchy cinnamon spiced pecan topping, and baked until perfect. This is the must-have recipe for the holidays, or really any time of year.

Simple Ingredients

– sweet potatoes – cream – coconut oil or butter – maple syrup or honey – vanilla – egg – cinnamon – sea salt – pinch of nutmeg Pecan Topping: - chopped pecans – einkorn flour (or all-purpose) – ground cinnamon – kosher salt – melted butter – pure maple syrup

How To Make Sweet Potato Casserole

1. Bake sweet potatoes in a 375 degree oven for 45-60 mins until soft. 2. Allow to cool, peel the potatoes, and add to a blender with butter, maple syrup, cream, egg, vanilla, cinnamon, salt and nutmeg.

3. Pour the sweet potato puree into a greased baking dish. 4. To the blender, add in all the ingredients for the pecan topping and pulse until its roughly chopped.

5. Sprinkle pecans over top of the sweet potatoes and bake for 25-35 minutes. Allow to cool and enjoy!
