Chocolate Superfood Bars

Ingredients

  • 1/2 cup melted cacao butter
  • 1/2 cup melted coconut oil
  • 1/2 cup cacao powder
  • 1/4 cup honey
  • 1/2 teaspoon vanilla
  • 1 scoop Earth Echo Foods Cacao Bliss Superfood Elixir blend
  • Shredded coconut

Instructions

  • Toast coconut in a cast iron skillet over medium heat. Stir constantly until coconut turns golden. Turn off heat
  • .Melt ingredients over double boiler. Once melted, combine ingredients together with an immersion blender.
  • Pour into a parchment lined 8x8 baking dish.
  • Add half of the toasted coconut while still liquid and stir.
  • Refrigerate until almost completely cooled.
  • Top with the rest of the shredded coconut.
  • Chill in the refrigerator until completely hardened. Cut and serve.

Notes

  • A regular blender will also work.
  • Do not skip the blending step. The honey will sink to the bottom during cooling - not good.
