Strawberry Stuffed French Toast

Thick slices of soft bread are layered with a delicious strawberry cream cheese filling, dipped in a rich custard, and fried in butter.

Ingredients

Strawberry Cream Cheese Filling:

  • 8 ounces cream cheese softened
  • 2 tablespoons honey
  • 1/2 cup diced strawberries plus more for serving

Custard Mixture

  • 4 large eggs
  • 1 cup whole milk
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Bread:

  • 12 slices sourdough brioche or sourdough challah or sourdough French bread
  • 3 tablespoons butter for cooking

Toppings: Optional:

  • Powdered sugar, butter, whipped cream, sliced strawberries, maple syrup, chocolate chips

Instructions

  • An hour or so before starting the recipe. Take out the cream cheese and allow it to sit at room temperature to soften.
  • Add the softened cream cheese and honey to a medium bowl, and stir until combined. 
  • Fold in chopped sweet strawberries into the sweetened cream cheese.
  • Divide and spread the strawberry cream cheese filling onto 6 slices of bread. Add the remaining 6 slices of bread to make 6 sandwiches. Another option is to create a pocket in thick sliced pieces of bread and stuffing the creamy strawberry filling into the pocket.
  • For the egg mixture, combine the eggs, milk, vanilla, cinnamon and salt in a large bowl and whisk well to combine.
  • Heat the butter over medium heat on a skillet or griddle.
  • Dip the cream cheese sandwiches into the egg mixture, and allow to sit for 5 seconds on each side to absorb. If the slices of bread are left too long, it can make the french toast soggy.
  • Place the cream cheese stuffed French toast on the hot skillet.
  • Cook for 2-3 minutes on each side, until golden brown and cooked through
  • Serve warm. Our favorite toppings are whipped cream, strawberries and maple syrup!

Notes

  • To add a little lemon twist to this recipe, add some lemon zest and a little lemon juice to the cream cheese mixture.
  • To avoid soggy french toast make sure to follow the recipe. Adding too much milk to the egg and milk mixture will leave you with soggy bread.
  • This doesn't have to be done with just strawberries, swap them out for fresh raspberries, blackberries, or blueberries.
