A strawberry vinaigrette dressing is a summer staple at the farmhouse. Not only is is a great way to use up strawberries in season, it brings a bright flavor to any salad! It is especially great over spinach or arugula salads.
Add in farmer’s cheese, nuts, red onion, grilled chicken, mandarin oranges, or avocado, and you have my favorite salad for the summer.

Ingredients

Strawberries – Use fresh strawberries for the best results. For something different, use fresh blueberries!
White wine vinegar – Apple cider vinegar or red wine vinegar could be used but would have a slightly different taste.
Mayonnaise – I love to make homemade mayonnaise. it is one of those easy recipes that seems harder than it really is in practice.
Olive oil – You could also use avocado oil or any neutral oil.

How to Make Strawberry Salad Dressing

Step 1: Add the strawberries to a food processor and blend until mostly smooth.

Step 2: Add the vinegar, maple syrup, mayonnaise, and salt, and blend again until well combined. Scrape down the sides as needed and blend again if any large pieces remain.

Step 3: With the food processor running on low, slowly stream in the olive oil until the dressing is smooth and emulsified.

Step 4: Transfer the fresh vinaigrette to a jar or dressing bottle, stir in the poppy seeds, and enjoy on any fresh salad.
Tips
- Use ripe, sweet strawberries: The flavor of the dressing really depends on the berries. If they’re a bit tart, you can add an extra drizzle of maple syrup.
- Make it ahead of time for easy summer salads. This dressing keeps well in the fridge for 3–4 days. Store in an airtight container, and give it a good shake before using.
- Poppy seeds are optional but are a great addition for extra texture.

Using frozen strawberries would not be ideal. While it could technically work, the flavor would be less potent, and the end result would be more watery.
To make a strawberry vinaigrette, you mix pureed strawberries with a little bit of vinegar, maple syrup, mayo, and oil.
