Instructions
Add the strawberries to the bowl of a food processor and blend until mostly smooth.
Add the vinegar, maple syrup, mayonnaise, and salt, and blend again until well combined. Scrape down the sides as needed and blend again if any large pieces remain.
With the food processor running on low, slowly stream in the olive oil until the dressing is smooth and emulsified.
Transfer to a jar or dressing bottle, stir in the poppy seeds, and enjoy.
Notes
Make ahead of time to allow the flavors to meld and develop. This dressing keeps well in the fridge for 3–4 days. Give it a good shake before using.
Use ripe, sweet strawberries. The flavor of the dressing really depends on the berries. If they’re a bit tart, you can add an extra drizzle of maple syrup.
Poppy seeds are optional but are a great addition for extra texture.
