How to Make Instant Pot Italian Beef

Step 1: Turn the Instant Pot to the sautรฉ function. While the pot heats up, cut the chuck roast into 4 equal pieces and season each side with a generous pinch of salt and pepper.

Step 2: Once the Instant Pot is hot, add the oil. Working in 2 batches, brown each side of the beef for about 2-3 minutes.

Step 3: Add all of the beef back to the pot along with the sliced onion, drained pepperoncini peppers, the brine, beef broth, onion powder, garlic powder, Italian seasoning, salt, and pepper. Give everything a quick stir.

Step 4: Place the lid on and set to pressure cook on high for 80 minutes, with 20 minutes of natural release.

Step 5: Remove the beef from the pot and shred with two forks.
