Thisinstant pot Italian beef roast recipe is the easiest dinner for busy weeknights. Tender and bursting with flavor, It is always a huge hit and is bound to make its way into your regular meal rotation.
16ouncejar sliced pepperoncini peppers + ¼ cup of the brine

Instructions
Turn the Instant Pot to the sauté function. While the pot heats up, cut the chuck roast into 4 equal pieces and season each side with a generous pinch of salt and pepper.
Once the Instant Pot is hot, add the oil. Working in 2 batches, brown each side of the beef for about 2-3 minutes.
Add all of the beef back to the pot along with the sliced onion, drained pepperoncini peppers, the brine, beef broth, onion powder, garlic powder, Italian seasoning, salt, and pepper. Give everything a quick stir.
Place the lid on and set to pressure cook on high for 80 minutes, with 20 minutes of natural release.
Remove the beef from the pot and shred with two forks.
Add the shredded meat back to the pot with all of the juices. Serve as desired.
Notes
You can use a pre-mixed spice blend for this or make your own. Italian seasoning usually consists of thyme, rosemary, oregano, basil, and marjoram.
Use the leftover cooking liquid from the beef as a delicious dip for sandwiches.
