Sourdough Panettone

Recipe Highlights

A classic Italian dessert, this Sourdough Panettone is not just for Christmas. Impress your guests with this sweet, airy bread. Made with a variety of dried fruits, panettone is packed with flavor and looks like a work of art.

Simple Ingredients

– Dried fruit & candied orange peel – Light rum (or fruit juice) –Water – Bread flour – Eggs – Active starter – Sugar – Salt – Vanilla – Butter

The day before you begin, soak your dried fruit in rum or water.  4-12 hours before starting the dough, feed your sourdough starter so it is active and bubbly when you create the dough. Mix the dough together.

Allow the panettone dough to rise until doubled.  After the first rise, roll it into a 12 by 15 rectangle. Spread the drained fruit and candied orange peel evenly over the top.  Shape dough

Add the shaped dough to a panettone mold or panettone pan and allow it to rise until just above the mold Once risen, score a shallow X across the top and add one tablespoon of butter. Bake for 1 hour at 350 degrees, or until cooked through and golden on top.
