Over-Easy Eggs

Learn how to make the best over easy eggs that have set whites and a runny yolk. They make a delicious and protein packed simple breakfast in just minutes. Grab some toast for the perfect dippy eggs.

Ingredients

  • 1/2 tablespoon butter
  • 1 egg
  • Salt and pepper to taste
  • Fresh herbs optional

Instructions

  • Heat a non-stick pan over medium-low heat.
  • Melt butter in the skillet.
  • Add raw eggs carefully one at a time to the melted butter.
  • Cook for 1-2 minutes. The egg whites should be set.
  • Carefully flip (trying not to break the yolk) and cook the second side for another 30 seconds for best results. They should have a runny egg yolk and set whites.
  • Sprinkle with a dash of salt and pepper and any other seasonings if desired..
  • Serve.

Notes

  • Only cook 1-2 eggs at a time to avoid over crowding the pan.
  • Heat over medium low heat. Cooking too high may overcook or potentially burn the whites.
  • Choose a non-stick frying pan for cooking so the eggs don’t stick. I like using a cast iron skillet or a ceramic coated pan for a healthy non-stick option.
  • Use fresh eggs. Older ones tend to spread apart more and not hold their shape as well.
