Ground beef is a staple in almost every household, including ours. So when we are out of pork breakfast sausage, I use ground beef to make my own.

Ground beef sausage has a deeprich flavor that pulls out taste of individual spices and seasonings such as garlic, paprika, thyme, and more.

It is a one of our favorite breakfast treats to pair with a slice of sourdough breadover-hard eggs, and fresh fruit. The savory sausage is a great compliment to the nutty flavor of whole wheat waffles or whole wheat pancakes, too.

Lean ground beef – You can use many types of meat to make sausage, not just pork. There is no olive oil or other oil needed for this recipes as the meat will render beef fat as it cook. We like to use grass fed beed that doesn’t have added antibiotics.  

Dried herbs – Dried spices are easier to use in this recipe than fresh herbs like fresh garlic or fresh sage.

How to Make Ground Beef Sausage

Step 1: In a large bowl, combine the ground beef with all spices and seasonings. Using your hands, mix thoroughly until evenly incorporated.

Step 2: Divide the meat mixture into 4 equal portions and shape each into a ball.

Step 3: Gently flatten into round thick patties.

Step 4: Heat a large skillet over medium-low heat. Cook the sausage meat for about 4-5 minutes per side, or until fully cooked through. Use lower heat to prevent burning, as the sugar in the seasoning can cause the sausage to brown quickly if cooked on medium high heat or even medium heat.

Homemade Ground Beef Sausage Tips

  • For evenly sized patties, you can weigh the mixture before shaping. The total mixture weighs about 470 grams. Divide it into 4 portions of approximately 120 grams each, then form into patties.
  • Cook ground beef sausage to an internal temperature of 160 degrees Fahrenheit (71 degrees Celsius). 
  • Cook’s tip? Low heat is best. Breakfast sausage often contains sugar or maple syrup, which can cause it to brown or burn quickly. Medium-low heat helps it cook through evenly. Cooking times may be a bit different.
  • Rest before serving. Let cooked patties rest for 1–2 minutes to retain juices.
  • Instead of patties, cook the seasoned ground beef to use in recipes like baked ziti, savory sweet potato hash, or as a topping for pizzas.
