When you live outside of town, it is not always convenient to run to your favorite coffee shop to grab a latte with lavender coffee syrup. 

The good news is you don’t have to leave your house to enjoy lavender flavor in everything from coffee to scones. All you need is this easy recipe for homemade lavender syrup.

Simple and quick to make – This recipe takes about 20 minutes total to create with only three simple ingredients. It doesn’t get much easier than that. 

Delicious and versatile – Lavender simple syrup has beautiful, refreshing floral notes. It can also be used in so many ways! Use it in drinks like coffee, iced tea, lavender lemonade, or even fancy cocktails. Add it to your baked goods, like my sourdough blueberry scones, or use it to make a glaze that would go perfectly on my sourdough lemon pound cake or sourdough brioche cinnamon rolls

Can be used for up to a year if stored correctly – Sometimes homemade versions of things, like my avocado mayo, do not last as long as their store-bought counterparts. That is not the case for this homemade lavender syrup! Store it in an airtight container in the fridge for up to a year. 

Lavender Syrup Ingredients

Culinary Grade Lavender – I used lavender I picked from a local farm. You can also find this in the grocery store or this organic dried lavender from Amazon works, too. Culinary lavender typically comes from Lavandula angustifolia plants, also known as “true” or English lavender. 

Water – Filtered water if possible.

Honey – I love to use local honey, but any kind of raw honey will do. You can also experiment with using other types of sugar, such as organic cane sugar or maple syrup.

Recipe Modifications and Variations 

This homemade lavender simple syrup is perfect all on its own, but there are also so many ways you can make it your own.

  • Add some homemade vanilla extract or almond extract.
  • Steep the lavender with additional food-grade dried herbs and flower petals, such as mint, thyme, or rose.
  • Squeeze in a little fresh orange or lemon juice for a beautiful citrusy twist.

How to Make Lavender Syrup

Step 1: Combine the water, honey, and lavender in a small saucepan or pot.

Step 2: Bring to a very gentle simmer, and then turn off the heat. Allow the lavender to steep for 15 minutes.

Step 3: Pour the liquid through a fine mesh strainer to remove the lavender.

Step 4: Store in an airtight jar or bottle in the fridge. Enjoy!

Tips

  • Be careful to not exceed 15 minutes for steeping the lavender. Otherwise, the lavender can become bitter. If you prefer a stronger lavender taste, you can always add more lavender blossoms. 
  • Adjust the ingredient amounts based on your preferences. Play with the ratio of sugar for the right amount of sweetness for your taste. If you want only a slight lavender flavor, cut down on the amount of lavender.
  • While this homemade lavender simple syrup is perfect in a variety of beverages and baked goods, you can also drizzle it directly onto sourdough French toast or sourdough pancakes for a summer take on these classic sweet breakfasts.
