Over the last few years, einkorn has become increasingly popular โ and for good reason. Not only is it a delicious way to bake and cook, but it is a much healthier grain.
Einkorn is one of the original ancient grains and one of the oldest heirloom wheats. It is also one of the only wheats that hasnโt been hybridized. Farmers started hybridizing wheat many years ago to create a grain more suitable for baking, which included increasing the gluten content to result in better crop yields.
While you can use einkorn for sourdough (learn how to make an einkorn sourdough starter here), it is unnecessary to ferment einkorn. This is because it naturally has less phytic acid and is easier to digest than regular wheat.

Iโve been grinding my own Einkorn berries for 2 months now and am loving it. I do have a couple questions, though:
Whatโs the difference between whole wheat and all purpose einkorn? The bag we ordered just says einkorn berries. Iโve made your einkorn sourdough many times, but it turns out pretty dense and flat. I wonder if I need a smaller Dutch oven? Im only using the berries I have instead of all purpose and whole wheat. Also, what kind of berries do you typically use for regular sourdough?

Whole wheat has all parts of the einkorn berry included. All purpose has been sifted. Einkorn is typically pretty dense. I typically use hard white wheat berries for my sourodugh!
This is the lady who basically revived growing Einkron grain when it was found and successfully germinated. She gathered farmers in Europe and was producing much of the world’s supply. She tragically died quite young. Her Einkorn cookbook is amazing. I have made this loaf quite successfully with a high rise. The different method for the Einkorn starter is key.
