Over the last few years, einkorn has become increasingly popular – and for good reason. Not only is it a delicious way to bake and cook, but it is a much healthier grain.
Einkorn is one of the original ancient grains and one of the oldest heirloom wheats. It is also one of the only wheats that hasn’t been hybridized. Farmers started hybridizing wheat many years ago to create a grain more suitable for baking, which included increasing the gluten content to result in better crop yields.
While you can use einkorn for sourdough (learn how to make an einkorn sourdough starter here), it is unnecessary to ferment einkorn. This is because it naturally has less phytic acid and is easier to digest than regular wheat.

Hello Lisa, I am new to milling my own flour. Do you need to soak this Einkorn wheat before milling? I see on your link that not all the time they sprout. Just need some education on soaking and preparing grain to flour.

I don’t soak my grains before milling. This may gunk up the mill. After milling I typically will “soak” them by using sourdough. I don’t typically soak einkorn at all because it is easier to digest and doesn’t have some of the same issues as modern wheat.
I’m an old lady, and have been baking for over 60 years. My husband’s food allergies prompted me to investigate ancient grains. A quick internet search rto see what others are doing with them yielded your website. Thanks so much for the tips, ncouragement and the great recipes!… I used your berry crisp topping recipe for yesterday’s apple crisp – which is very much like my grandmother’s recipe, updated for today’s healthier eating – and it was a total hit!!!
