Einkorn brownies are decadent, fudgy, one-bowl brownies that are super simple and incredibly delicious. A few ingredients and a few minutes are all they require, making these a great choice for a simple, consistently delicious treat.

Brownies may be one of my favorite desserts. Top with some homemade ice cream, and Iโm in heaven. Sometimes, you just need that one faithful recipe that you can make in a pinch to bring to a friend, or to bring to homeschool play group, or even for late night dessert after the kids go to bed.
I loveย sourdough brownies, but they do require planning and thinking ahead, which doesnโt always happen and isn’t always possible. These einkorn brownies really couldnโt be simpler, and they can easily be made last minute.
One bowl, ten minutes to mix up, and then allow them to bake while you clean up the kitchen. Not only will the kitchen be clean, but your house will have an amazing chocolate aroma wafting through the air.

If you love brownies, you will most certainly love this recipe. Double chocolate, homemade brownies with a fudgy, moist texture. They are better than any box recipe, and I promise, this recipe isn’t much harder than popping open a box.

What is einkorn?
Einkorn is a type of wheat that has not been hybridized like most conventional wheat has been. It has a lower gluten content, making it easier to digest. Those that are gluten intolerant or just have some digestive issues may be able to tolerate einkorn just fine.ย
Unfortunately, those who have celiac will still need to steer clear.
What does einkorn taste like?
Einkorn has a very similar flavor to regular wheat, but offers an additional mild, nutty flavor.
Tips For Making Einkorn Brownies
- Chocolate chunks are way better than chips. Yes, this may just be my opinion, and chips will work just fine, but there is just something extra decadent about the chocolate chunks.
- Espresso is optional, but this addition to the brownie gives a richer chocolate flavor.
- Donโt skimp on the salt. Adding salt to baked goods helps brings out the flavor and will actually taste more sweet than if you omit it.
- You cannot substitute regular flour for the einkorn flour. Well, you could, but more liquid may need to be added as einkorn doesnโt absorb as much liquid as regular wheat.
Tools or ingredients you may need:
Large bowl
Measuring cups and spoons
Small cast iron skillet (for butter melting – optional)
9×13 baking dish
How To Make Einkorn Brownies
Gather ingredients and preheat oven to 350 degrees.
Melt butter in a pan or dish and set aside to cool for a minute.
In a large bowl, combine sugars, butter, cocoa, salt, espresso, and vanilla; stir well.
Add eggs and mix.
Slowly fold in einkorn flour until combined. It doesn’t have to be perfectly smooth, but make sure there are no large clumps.
Fold in chocolate chunks.
Pour into a greased or parchment lined 9×13 baking dish, spreading the batter evenly throughout the pan.ย
Bake for 30 minutes. The edges should be starting to get crispy and the middle should be soft, but set. If you stick a toothpick in the center, it should come out a little crumbly, but not wet.

Einkorn Brownies
Ingredients
- 1 cup melted butter, unsalted
- 1 cup granulated sugar
- 1 cup brown sugar
- 3 large eggs, room temperature
- 1 cup cocoa powder
- 1 teaspoon salt
- 1 tablespoon coffee or espresso, optional
- 1/2 tablespoon vanilla extract
- 1 1/4 cups einkorn flour
- 1 cup dark chocolate chunks, can also use semi-sweet

I like that whole grain flour is used.
But, I am trying to healthify recipes all around. So the white sugar is a hard no.
I will try this with sucanat. My dream brownie would be healthy in every way.
I havenโt tried the recipe yet but have questions. Is this espresso powder or espresso coffee.
And where do you find einkorn flour
Is the Coffee / Expresso 1 Tblspoon of BREWED or is the grinds?
Add the grounds to the batter, just make sure they are very fine.
