Soft White Wheat Flour – Any whole wheat flour will work, but if you are milling your own grains, I recommend a soft white wheat for the best results. I put together a list of where to buy wheat berries to help you get started on your freshly milled grains journey.  

Zucchini – You can peel the zucchini before shredding it, or you can leave the peel on. Just make sure to wash it thoroughly.

How to Make Whole Wheat Zucchini Bread

Step 1: Preheat the oven to 350 degrees Fahrenheit. Prep your loaf pan by greasing it or lining it with parchment paper. In a medium bowl, combine the dry ingredients, including the flour, cinnamon, baking soda, baking powder, and salt. You can also add a pinch of nutmeg for additional flavor. Set aside.

Step 2: In another small bowl, whisk the butter and sugar until it is light and fluffy. Add the vanilla and eggs.

Add the zucchini to the wet ingredients and mix to incorporate. Be careful not to overmix the batter.
