These fresh croutons are a great addition to salads and creamy soups. We love them on top of classic tomato soup (my favorite soup!), roasted red pepper soup, and split pea soup.

Olive oil – I love the flavor that olive oil adds to this gluten free croutons recipe. Sometimes I will do half butter and half olive oil. You could also substitute with melted butter, avocado oil, or other neutral oil.
Italian seasoning or Herbs de Provence – Italian seasonings usually contain oregano, thyme, basil, rosemary, and marjoram. If you don’t have these spice blends, you can use your own mix of onion powder, garlic powder, black pepper, and the herbs listed above.
Salt – My favorite is unrefined sea salt.

How to Make Gluten Free Croutons
Step 1: Make homemade gluten free bread first if desired. You can also use store-bought bread. Preheat the oven to 350 degrees Fahrenheit. Line a sheet pan with parchment paper. Use a sharp knife to cut the bread into 3/4 inch bread cubes.
Step 2: Lay the cubes onto the baking sheet and drizzle with olive oil, seasoning mix, and salt.
Step 3: Mix well to combine and evenly coat the bread cubes with oil and seasonings.
Step 4: Spread in an even layer on the parchment lined baking sheet. Bake for 15 – 20 minutes. The edges should start to turn a little golden brown.
Step 5: Allow to cool completely and then enjoy. You can top with fresh herbs for even more flavorful croutons.
