Absolutely. If you start from discard you can use it right away. If you are starting a starter from scratch, you can technically use discard right away, but it won’t have any of the health benefits.

That really depends on the recipe itself. There are some tricks for subbing einkorn like using ⅓ less liquid or using more flour, but that’s really a whole new recipe!

I’ve not personally tried it with potato flake discard, but they should be the same in a recipe.
Do you adjust the recipes depending on if you are using traditional sour dough starter vs. the potato flake sour dough starter?
You should be able to use a 1-1, but you may have to adjust the flour if the consistency is really wet.
