How to Make Homemade Whipped Cream

Cream in a stand mixer bowl.

Step 1: Pour the cold heavy cream into a large bowl. Using a hand mixer or stand mixer fitted with the whisk attachment, whip the cream on medium speed until it holds soft peaks.

Adding maple syrup to whipped heavy cream.

Step 2: Add the maple syrup and vanilla extract, then continue whipping just until medium peaks form and the mixture looks smooth and airy. (This should take a couple of minutes.)

Tips

  • Starting with cold cream helps the recipe to whip up faster. Use a lower speed at first, then increase from the low speed to a higher one as you go.
  • Avoid overwhipping. Overwhipping turns the cream grainy and can even separate into butter and buttermilk. Stop as soon as peaks form.
  • Medium peaks are when the whipped cream is thick enough to hold its shape, but still soft and a little floppy at the tip when you lift the whisk. It’s perfect for spreading or dolloping

Recipe FAQs

How do I store homemade whipped cream?

Store in an airtight container in the fridge for up to 48 hours. If the cream starts to separate, simply whip into peaks again before using. If desired, you can add a teaspoon of gelatin to the recipe as a stabilizer. This will extend the life of stored whipped cream.

Is whipped cream just heavy cream?

Heavy cream or heavy whipping cream is about 35% milk fat, which is a bit higher than whipping cream or light whipping cream. Whipping cream can be anywhere from 18% to 30% milk fat. Whipped cream is a mixture of heavy cream and a sweetener like maple syrup or confectioners’ sugar.

What are the common mistakes in making whipped cream?

Not using cold cream is a common mistake. Cold cream helps the recipe whip into stiff peaks more quickly.

What are the best ways to use whipped cream?

Add whipped cream to any of your favorite desserts! No ice cream on hand for your pie? Add a dollop of homemade whipped cream instead!
