Flour – All-purpose flour works very well in this recipe. When I make this for my family, I love to use freshly milled flour. I put my bowl on my kitchen scale and measure out 280 grams of soft white wheat. After milling, I proceed with the recipe as usual. Sourdough discard – Either discard or active sourdough starter works fine. 

Bananas – Overripe bananas are best for their heightened flavor and sweetness. I always buy bananas in bulk and let them get very ripe on the counter. After a couple of batches of this banana bread, I peel the rest and put them in a Ziploc bag to freeze. They are perfect for berry kefir smoothies.

Vanilla – Store-bought vanilla works great, but you can’t beat the flavor of homemade vanilla extract.

How to Make Sourdough Banana Bread

Step 1: Preheat oven to 350 degrees Fahrenheit and lightly grease a 9×5 loaf pan (or line with parchment paper). In a medium bowl, combine flour, baking soda, baking powder, and salt. Set aside.

Step 2: In a stand mixer or separate bowl, whisk melted butter and brown sugar for five minutes, until light and fluffy.

Step 1: Approximately 12-24 hours before you plan to bake the banana bread, combine flour, melted butter, eggs, and sourdough discard in a large bowl. Cover with a towel and ferment at room temperature for 6 hours, then refrigerate for another 6-18 hours to ferment further.

Step 2: The next day, preheat the oven to 350 degrees and prepare your loaf pan by greasing or lining with parchment paper. Using the bowl of a stand mixer with the paddle attachment, add the fermented batter, baking powder, baking soda, salt, brown sugar, mashed bananas, and vanilla. Mix on low to medium speed until completely combined. You can mix by hand, but the fermented dough will be stiff and difficult to combine. 

Step 3: Pour the batter into a loaf pan and bake for 50-60 minutes until golden and set.

  • If you don’t have overripe bananas but want to make banana bread, you can speed up the process by baking unpeeled bananas on a baking sheet for about 30 minutes in a 250-degree oven. They will be brown on the outside when ready.
  • Don’t over-mix the batter. Mixing encourages gluten formation, too much of which results in a dense, tough loaf.
  • You can also make this recipe as muffins. Following the same recipe, distribute the batter into regular-sized muffin tins and bake for 20-25 minutes until they start to turn golden brown and a toothpick comes out clean. 
  • If you like more texture, reserve some banana during mashing to chop into larger pieces for a heartier bite of banana. I do the same with rough chopping the apples in these healthy apple and banana muffins – I love some fruit texture!

    My fermented dough was a hard ball not mixable with other ingredients when i took it out of the fridge. I don’t know what happened. There was little dough balls all over in my baked bread. I had to throw it out. I mixed eggs, flour, butter and starter. Sat on counter, then put in fridge overnight. It was a big dough ball, my paddle could barely get through it. At first it flung the whole dough ball out of the bowl!! Was a disaster…
    I might try again… LOL

      try this next time..The Night Before: Mix only the melted/softened butter, flour, sugar, and sourdough starter together in a bowl. Do not add the eggs yet. Cover and let it sit on the counter or in the fridge. Without the eggs, it will form a shaggy, much softer paste.The Next Day: Bring the mixture to room temperature for an hour so the butter softens. Then, add your eggs, mashed bananas, baking soda, and vanilla. Because the mixture doesn’t have that rigid egg-gluten structure, it will easily break down and blend into a smooth, normal cake batter.
