I put my bowl on my kitchen scale and measure out 280 grams of soft white wheat. After milling, I proceed with the recipe as usual. Sourdough discard – Either discard or active sourdough starter works fine.
Bananas – Overripe bananas are best for their heightened flavor and sweetness. I always buy bananas in bulk and let them get very ripe on the counter. After a couple of batches of this banana bread, I peel the rest and put them in a Ziploc bag to freeze. They are perfect for berry kefir smoothies.
Vanilla – Store-bought vanilla works great, but you can’t beat the flavor of homemade vanilla extract.

How to Make Sourdough Banana Bread

Step 1: Preheat oven to 350 degrees Fahrenheit and lightly grease a 9×5 loaf pan (or line with parchment paper). In a medium bowl, combine flour, baking soda, baking powder, and salt. Set aside.

Step 2: In a stand mixer or separate bowl, whisk melted butter and brown sugar for five minutes, until light and fluffy.

Step 3: Add mashed bananas, eggs, sourdough discard, and vanilla to the butter mixture. Whisk until smooth.

- If you don’t have overripe bananas but want to make banana bread, you can speed up the process by baking unpeeled bananas on a baking sheet for about 30 minutes in a 250-degree oven. They will be brown on the outside when ready.
- Don’t over-mix the batter. Mixing encourages gluten formation, too much of which results in a dense, tough loaf.
- You can also make this recipe as muffins. Following the same recipe, distribute the batter into regular-sized muffin tins and bake for 20-25 minutes until they start to turn golden brown and a toothpick comes out clean.

Made with gluten free discard starter and King Arthur Bread flour and used muffin pan. Added one extra banana since mine were small and gluten free tends to be dry anyway. They turned out absolutely delicious. Moist great banana flavor no would ever guess they were gluten free. Thank you for this recipe. Will be my go to for quick easy gluten free banana bread muffins.

This is the 3rd discard banana bread recipe I’ve tried, and it’s a keeper! I didn’t do the long ferment because I wanted it tonight lol. Easy to make. I didn’t measure my loaf pans, but one is a Lodge cast iron one. This recipe easily made 2 loaves for me, I could tell when filling the cast iron one that it would overflow if I used it all. I grabbed another loaf pan and parchment loaf liner (I love those things!) and made 2. I ain’t mad at that!! LOL. Nice crisp crust on outside, moist and tender inside. I added mini chocolate chips, about 3oz. I might do 4oz next time. Looking forward to a slice for breakfast too! Can’t wait to try more of your recipes! I’m new to the sourdough world and having a ball!
