Flour – All-purpose flour works very well in this recipe. When I make this for my family, I love to use freshly milled flour. I put my bowl on my kitchen scale and measure out 280 grams of soft white wheat. After milling, I proceed with the recipe as usual. Sourdough discard – Either discard or active sourdough starter works fine.
Bananas – Overripe bananas are best for their heightened flavor and sweetness. I always buy bananas in bulk and let them get very ripe on the counter. After a couple of batches of this banana bread, I peel the rest and put them in a Ziploc bag to freeze. They are perfect for berry kefir smoothies.
Vanilla – Store-bought vanilla works great, but you can’t beat the flavor of homemade vanilla extract.

How to Make Sourdough Banana Bread

Step 1: Preheat oven to 350 degrees Fahrenheit and lightly grease a 9×5 loaf pan (or line with parchment paper). In a medium bowl, combine flour, baking soda, baking powder, and salt. Set aside.

Step 2: In a stand mixer or separate bowl, whisk melted butter and brown sugar for five minutes, until light and fluffy.

Step 3: Add mashed bananas, eggs, sourdough discard, and vanilla to the butter mixture. Whisk until smooth.

- If you don’t have overripe bananas but want to make banana bread, you can speed up the process by baking unpeeled bananas on a baking sheet for about 30 minutes in a 250-degree oven. They will be brown on the outside when ready.
- Don’t over-mix the batter. Mixing encourages gluten formation, too much of which results in a dense, tough loaf.
- You can also make this recipe as muffins. Following the same recipe, distribute the batter into regular-sized muffin tins and bake for 20-25 minutes until they start to turn golden brown and a toothpick comes out clean.

I have made this recipe 3 times. All times I have fermented the dough. The first time I got a great rise during fermentation, the following times I’ve ended up with a dense log. I cannot figure out the problem, and obviously those bakes were not as good. My discard works great and makes other lovely things. Any advice? I can’t figure it out.

Ive made this doubled recipe twice this week so that should tell you something. I’ve made it into muffins, regular loaves and even some mini loaves. Each one was fabulous and all my kids love it!! I am new to sourdough baking. I am trying to make this banana bread & I put together the active starter, butter, egg & flour and put it in the fridge overnight covered in cling wrap to long ferment. This morning when I uncovered the bowl I found the mix to be dense & dry on the top. Is it ruined and unusable? 😬
