I put my bowl on my kitchen scale and measure out 280 grams of soft white wheat. After milling, I proceed with the recipe as usual. Sourdough discard – Either discard or active sourdough starter works fine.
Bananas – Overripe bananas are best for their heightened flavor and sweetness. I always buy bananas in bulk and let them get very ripe on the counter. After a couple of batches of this banana bread, I peel the rest and put them in a Ziploc bag to freeze. They are perfect for berry kefir smoothies.
Vanilla – Store-bought vanilla works great, but you can’t beat the flavor of homemade vanilla extract.

How to Make Sourdough Banana Bread

Step 1: Preheat oven to 350 degrees Fahrenheit and lightly grease a 9×5 loaf pan (or line with parchment paper). In a medium bowl, combine flour, baking soda, baking powder, and salt. Set aside.

This is a great recipe! I add good quality mini dark chocolate chips for fun. Question, is there a way to lower the sugar? What might be an alternative ingredient? Could I up the flour? I tend to add extra banana so that adds sweetness too.
You could use honey in place, or cut the sugar in half.

I made this a few time now. I used light brown sugar instead of dark. I also added 1/2 teaspoon of cinnamon.
Also, I just put everything in one large bowl and beat it. I added a handful, of chopped walnuts to the batter and then put some on top. Everyone loved it.

This is my absolute FAVORITE banana bread – I’ll never make another! For those doing the long-ferment, I highly recommend creaming the butter and sugar and mixing with the other ingredients as part of the long-ferment – only save the bananas and leavening agents for later baking. If you don’t add the sugar from the start, it’s nearly impossible to mix and it doesn’t rise well, as others have mentioned (though the flavor is still excellent!)

Yes! It was very hard and stiff. I scooped it out of the bowl and broke it apart before adding the other ingredients the next day. Then I placed it in my kitchenaid and mixed it until it was fully incorporated.
