Flour – All-purpose flour works very well in this recipe. When I make this for my family, I love to use freshly milled flour. I put my bowl on my kitchen scale and measure out 280 grams of soft white wheat. After milling, I proceed with the recipe as usual. Sourdough discard – Either discard or active sourdough starter works fine. 

Bananas – Overripe bananas are best for their heightened flavor and sweetness. I always buy bananas in bulk and let them get very ripe on the counter. After a couple of batches of this banana bread, I peel the rest and put them in a Ziploc bag to freeze. They are perfect for berry kefir smoothies.

Vanilla – Store-bought vanilla works great, but you can’t beat the flavor of homemade vanilla extract.

How to Make Sourdough Banana Bread

Step 1: Preheat oven to 350 degrees Fahrenheit and lightly grease a 9×5 loaf pan (or line with parchment paper). In a medium bowl, combine flour, baking soda, baking powder, and salt. Set aside.

Step 2: The next day, preheat the oven to 350 degrees and prepare your loaf pan by greasing or lining with parchment paper. Using the bowl of a stand mixer with the paddle attachment, add the fermented batter, baking powder, baking soda, salt, brown sugar, mashed bananas, and vanilla. Mix on low to medium speed until completely combined. You can mix by hand, but the fermented dough will be stiff and difficult to combine. 

Step 3: Pour the batter into a loaf pan and bake for 50-60 minutes until golden and set.

  • If you don’t have overripe bananas but want to make banana bread, you can speed up the process by baking unpeeled bananas on a baking sheet for about 30 minutes in a 250-degree oven. They will be brown on the outside when ready.
  • Don’t over-mix the batter. Mixing encourages gluten formation, too much of which results in a dense, tough loaf.
  • You can also make this recipe as muffins. Following the same recipe, distribute the batter into regular-sized muffin tins and bake for 20-25 minutes until they start to turn golden brown and a toothpick comes out clean.

    This is my favorite muffin at the moment! I add a tsp of cinnamon and 1/2 c chopped walnuts. I cut the sugar down to 1/4c, plus 1/4c blackstrap molasses, plus 2Tb Pyure stevia blend and 1/4c brown sugar Swerve. These are delicious and really hit the spot, whether for a snack or with some yogurt or cottage cheese for a quick breakfast or lunch. It’s just hard waiting for the bananas to ripen, and keeping them from getting eaten, ha ha! Thank you, Lisa!! God bless!

    I notice that some recipes will add everything and let it sit and ferment overnight and others only some of the ingredients are added for the longer fermentation and then the rest are added the following morning. Is this a matter of preference or when does it matter/make a difference?
