I love all your help with sourdough and recipes. I have a thought / wonder. I am growing mushrooms from Nearby Naturals, just getting ready to harvest blue oyster mushrooms for the first time. We love sourdough pizza, my question could you make sourdough omelets on the pizza stone? I would love to make omelets with my harvested mushrooms. Have you ever made omelets this way? What do you think?
Katie says
You probably could on a preheated stone, but it would be incredibly messy. I would suggest using a skillet. I use a cast iron skillet for my egg dishes including omelets. The key to eggs not sticking is properly seasoning and greasing the skillet before cooking and getting the skillet HOT before putting anything into it to cook. This goes for any skillet, not just cast iron.
