Learn how to make homemade chocolate, that is both healthy AND delicious!
I don’t write about it much on here, but I am a total health nut.
I research and read books on the subject constantly.
When I am sewing farmhouse pillows, folding laundry or doing dishes I almost always have one earbud in my ear listening to audio books, interviews or lectures on gut health.
Three books that have had a strong impact on me lately are “Gut and Psychology Syndrome” by Natasha Campbell, “Body Ecology” by Donna Gates and “Eat Dirt” by Dr. Josh Axe.
I am fully convinced that sugar and toxins destroy gut health, so I needed some kind of loophole that would still allow me to enjoy chocolate.
I read about cocoa butter in Donna Gates book and I had already been aquainted with it in making my homemade sunscreen recipe, but I had never cooked with it. If you have ever opened a bag of cocoa butter and smelled it, you know why the idea sounded so appealing to me. Seriously, smell the stuff!
For this recipe mix together over medium heat:
1 cup of cocoa butter
1 cup of coconut oil
Heat until they are just melted and remove from heat. Stir in:
1/2 cup of cocoa powder
Stevia or raw honey to taste
Couple dashes of salt
You can also add in the following for “superfood” portion, but they are totally optional:
1 tablespoon gelatin
1 tablespoon gelatinized maca powder, a peruvian root vegetable
1 tablespoon ecobloom
I like to mix all my ingredients together in my blender.
I pour most of the “batter” into a square glass dish and put it into the freezer. I reserve a small amount in a bowl, at room temperature, to act as the glue for the toasted coconut flakes.
The toasted coconut flakes is also optional, but if you try it once it will no longer be an option.
Take four cups of coconut chips in a skillet over medium heat. Stir constantly until they are browned. Do not be tempted to walk away from the pan. They will burn very quickly!
When your pan of chcolate is nice and hard, pull it out of the freezer and pour the reserved portion on top. Quickly add the toasted coconut flakes, before the new layer of chocolate has a chance to harden.
Try not to eat them all in one sitting. They are seriously so ridiculously good, you will have a hard time!

I forgot I also wanted to ask – when I use honey to sweeten the chocolate, it seems to always want to settle on the bottom of the pan, no matter how much I mix it. Do you know of a solution for this?
